The Dirty Martini Guide Every Houston Girl Needs

If there’s anyone I trust to take a dirty martini seriously, it’s Maddie Poole.


She’s a lawyer, so you already know the standards are high and the opinions are strong. After long days and even longer weeks, she’s perfected her order which means she knows exactly who’s getting it right and who’s not. 



"I order my martinis the same way every time: Grey Goose, extra dirty. And when I say dirty, I mean as dirty as Galveston, a line I deliver to bartenders with complete confidence.


Maybe it’s a bit of a lawyer cliché to love a good drink after work, but I’ve come to accept it. I grew up in Annapolis, Maryland, surrounded by saltwater, so perhaps my appreciation for a properly briny martini started there.


Either way, after ordering this exact martini all over Houston, I’ve developed some strong opinions. Here are five places that get it exactly right."

Anvil Bar & Lounge

Location: Montrose

"If you ask me where to get the best martini in Houston, the answer is easy: Anvil. It’s perfect. No notes. It’s in Montrose, which I’ll admit already puts it in my good graces. The bartenders know exactly what they’re doing. And the martini itself? Ice cold, perfectly balanced, and exactly as dirty as you ask for it. For me, it’s the standard."


Honorable mention: If you’re already there, it’s worth slipping upstairs to Refuge. It’s darker, quieter, and feels a little like a secret.

Second honorable mention: Donna’s, from the same people behind Anvil but over in the Heights, deserves a nod too. The space has this cool mid-century modern vibe, with art everywhere and the kind of energy where people are clearly settling in for the night. Same cocktail pedigree, just a lot less serious about it.


Park House

Location: River Oaks

“Park House has my second favorite martini in Houston, and part of the reason is the way it arrives. The drink comes out with what is essentially a tiny ice rink floating on top of the glass. They also bring a little sidecar of olive juice, which feels like a thoughtful acknowledgment that some of us take ‘dirty’ very seriously. The vibe is very different from Anvil. Park House feels like someone’s very chic living room.”


Bar Madonna

Location: Montrose

“Bar Madonna is where you go when you want your martini to feel a little romantic. It’s tucked inside an old Montrose house (The Marlene), and the whole place feels like a tiny European bar that somehow landed in Houston. The martini itself is a little lighter than the others on this list, but it works. It’s the kind of place where you go for one martini and end up lingering.”


Starduster Lounge

Location: The Heights

“Starduster is what happens when a cocktail bar decides it doesn’t need to take itself too seriously. The whole place has this cosmic-cowboy, mid-century Texas vibe. What makes their cocktails fun is that they’re always putting some kind of twist on them. Nothing feels boring or overly precious. It’s creative, but in a way that still feels easy and playful.”


La Colombe d’Or

Location: Midtown

“La Colombe d’Or is where you go when you want your martini in a slightly more glamorous setting. The bar is inside this old Montrose mansion that’s now a hotel, and the whole place feels like you’ve accidentally wandered into someone’s very elegant house party. The martini fits the setting perfectly—clean, classic, and polished. It’s the kind of place where you sit down for one and suddenly feel like you should probably be dressed a little better than you are.”
